Mini Lemon Meringue Pies

Today I decided to make some mini lemon meringue pies as there were some filo pastry shells in my freezer and a box of mini meringues in my pantry. All that was missing was the lemony filling. I figured I'd pick some up at the local supermarket and assemble these little desserts in the time it took to brew a cup of coffee. The only problem was I couldn't find lemon curd anywhere. Now while I am sure I could have found some at a specialty store, I realized that I could probably make my own so I pored through recipes, tinkered around with the ingredient list and voilà! Unlike jam, which can be a little tricky to make, lemon curd was surprisingly easy and I was left wondering why I hadn't made it before. Needless to say it didn't last long..

Ratatouille

Probably the hardest thing about ratatouille is its pronunciation! This is the perfect healthy comfort food for a cold winter's evening and it couldn't be easier to make. There's no right or wrong way to make this dish. Roasted vegetables and herbs mixed together and served with couscous- delicious!

Bentley

Bentley is still waiting for her forever home. She has now been at the Keller shelter for several weeks and we can't understand why. She is beautiful, incredibly smart and loves to play! Yesterday one of the shelter's wonderful volunteers spent some time working with her and she had the time of her life. She is crazy about tennis balls and is an excellent retriever who could play for hours on end and never get tired. Bentley needs to find an owner who shares her love of exercise and outdoor activities. Hopefully the right family will see her sweet face and fall in love. Paws crossed!

Bananas

Today I went bananas and created a light but satisfying dessert which is a twist on the classic banana split. Since I used home made pear ice cream, I named my creation the 'Pear-ana Split'. Instead of traditional caramel sauce, I pureed  warm dates with a little orange juice then finished the dish off with a dollop of whipped cream and my favorite new garnish, pomegranate arils.

We are so excited that Max was adopted this weekend. He has been in our foster program since early September and is one of the sweetest dogs we have ever met. His new family have promised to spoil him and he will have 2 cats and an Airedale as furry companions.
