Felix

Here's the latest guy to join our foster program. Felix is a senior, declawed cat who was found wearing a collar, wandering near a busy road in Keller. He had a wound on his side that looked like it might be the result of a dog bite. When he was found shelter staff believed he must have lost weight recently as his collar was fairly loose around his neck. Felix is an incredibly sweet cat who deserves to find happiness with a loving family. We are sure someone must be missing him and are hoping to reunite him with his loved ones. If this doesn't happen, he will soon be available for adoption.

Salted Cod in Crispy Tortilla Bowls

The first time I tried fish tacos I was in Brownsville, Texas and I immediately knew that this was a meal that I would make again and again. Over the years I have prepared tacos using various different fish - everything from tilapia to mahi mahi but this week I decided to mix things up a little and used salted cod.  Until now my only experience with salted cod was several years ago during a trip to Nova Scotia in our 'big-ass' camping van. My husband and I understood that salting cod was a way of preserving it and that before consuming the fish we needed to soak it in water for several hours, changing the water frequently. However as we were traveling and were not in a position to do this, my husband suggested we simply chew on chunks of the salted fish and wash it down with a cold beer. It was somewhat unconventional but we survived to tell the tale! In this recipe, I soaked the fish overnight then poached it with lime juice and sriracha seasoning for 20 minutes until soft. I next flaked it, added it to chopped avocados and tomatoes then  spooned the mixture into a crispy tortilla shell and topped it with a garlic and cilantro sour cream dressing. Delicious!

Griffin

Since Griffin was nervous around the dogs in his foster home, he moved in with my pack last week. I knew he was still a little shy around strangers but had been assured by his foster family that he was actually a real snuggler once he felt comfortable. I decided to start off by keeping him in a bathroom, figuring there were less areas for him to hide there. His first reaction was to hunker down in the litter box. Realizing he needed a place to feel safe I brought him a little fabric cat cave. He immediately retreated inside his cave, tucked his paws under his chest and seemed very content. Every day I sat on the floor beside him and petted him while he sat inside his cave. A couple of days ago he started to purr, rolled over for belly rubs and then ventured out and rubbed against my legs, offering me a sign that he finally felt safe. As he still seemed nervous whenever I tried to pick him up, I decided to transport him around the house in his cave. In the evenings I placed it on the sofa next to us and he would happily watch television with us, occasionally coming out to walk around the sofa before returning to his safe place. During the day he sits in his cave on a chair in my office, surprising any of my cats who happen to come by looking for a snack. Griffin would most likely do well with a feline friend. He will make a great companion for the right person who understands he needs to be encouraged to come out of his shell - or in this case - his cave. Caramel Pecan Ice Cream

I just found out today that I am the winner of the 2014 recipe contest organized by the Bass Pecan Company with my recipe for Pecan and Caramel Coconut Ice Cream! I am so excited about this as I absolutely loooove pecans and use them in everything from granola and salads to cookies and cakes.
Here's my recipe in case you'd like to try it.

The combination of crunchy, buttery pecans and rich gooey caramel is sure to be a crowd pleaser and have your guests asking for more. The recipe uses Dulce de Leche, a delicious caramel sauce, conveniently available in cans at most large grocery stores. If Dulce de Leche is not available, you can make your own by boiling a can of condensed milk in a large pot of water for around 3 hours. Make sure the can is totally submerged at all times and take care to allow the can to cool before opening.
This may be the most delicious ice cream you have ever tasted so consider doubling the recipe to make sure you have enough for everyone.


Ingredients
½ cup butter
1 cup pecan halves
½  teaspoon salt
2 eggs
¾  cup sugar
1 ½  cups coconut milk
1 ½  cups heavy whipping cream
½ cup  Dulce de Leche

Instructions
Melt butter in a small saucepan, add pecans and salt and sauté for approx. 3-4 minutes. Remove from heat, separate nuts from butter then set aside.
In a large bowl, beat eggs  until light and fluffy then add sugar, coconut milk, cream and melted butter and stir until well combined.
Pour mixture into the pre-cooled bowl of an ice cream maker and follow the manufacturer’s instructions to freeze ice cream. When mixture has cooled and thickened, after approx. 25-30 minutes, remove from bowl and pour into a plastic container. Stir in pecans and add pecan-sized pieces of  Dulce de Leche, swirl evenly through ice cream then place container in freezer and continue to cool for a minimum of 3 hours.  
Serve with a sprinkling of grated chocolate if desired.
