Cake Pop Kebabs

A week after our trip to New York, and still on a chocolate high, I decided to try out a new recipe for Valentine's Day. I couldn't choose between chocolate dipped strawberries and decadent cake pops so decided to combine the two. These cake pops are sinfully rich with a moist filling of chocolate cake and Dulce de Leche. They are coated in delicious semi-sweet chocolate and sandwiched on a skewer between fresh, juicy strawberries and maraschino cherries. Delicious!

Maple Granola

In an effort to eat healthier, I recently decided to start making my own granola. Many years ago I was addicted to a certain store bought version which I used to inhale straight from the box, under the false assumption that it was good for me. As I slowly started gaining weight, I checked the ingredient list and realized that the percentage of sugar was so high that I probably would have been better off eating a Mars Bar. My home made granola contains no sugar - just oats, fruit, nuts, seeds and a healthy dose of maple syrup and coconut oil.  Paired with Greek yogurt and topped with fresh strawberries, there's no better way to energize your day.

Trip to New York

Last December I entered a contest organized by Perugina, an Italian confectionery company famous for its Baci chocolate kisses who were looking for recipes which included Perugina products in their ingredient list. I played around with various options, finally settling on a 3 tiered concoction consisting of a flourless chocolate cake base, 2 layers of creamy truffle filling and delicately sliced Perugina white chocolate Bacis. A few days after submitting my entry, I received a phone call from a company representative telling me I had won the Grand Prize - a trip to New York for two, the chance to attend a class by a master chocolatier at Perugina's chocolate school and $500 spending money!

Our Big Apple adventure took place this weekend and it was wonderful. My husband and I flew into New York early Friday morning and arrived at our  hotel in mid-Manhattan around noon. Staff greeted us by presenting us with a basket of assorted Perugina products - a great way to begin our weekend. The weather in New York was considerably colder than in Texas with the temperature hovering around 26 Fahrenheit. While we once considered ourselves tough, surviving long Canadian winters year after year, it appears we have become soft since moving to Texas. We were freezing! We kept ourselves warm by visiting some of the cute little stores and restaurants in Greenwich Village, spent some time in the New York City Fire Museum in the Hudson Square district then passed by the apartment where Monica Geller from 'Friends' lived.

On Saturday we showed up bright and early for our chocolate class and were blown away by the size of Eataly, the mega Italian food destination where the class took place. Surrounded by restaurants and stores selling authentic Italian beers, prosciutto and salami, I felt we had taken a wrong turn and somehow landed in a bustling Italian market place.  We began our class by sampling different types of chocolate, starting with white (which technically speaking isn't actually chocolate) then milk and finally dark which was approximately 80 % cocoa. We also sampled Perugina's special Limoncello chocolate which was incredible. Our chocolatier gave a demonstration of tempering chocolate and explained that in addition to traditional dark, milk and white chocolate there exists a 4th type of chocolate often used in European sweets - gianduia - a soft creamy product made from chocolate and hazelnut paste. He distributed mounds of gianduia to each participant instructing us how to top these with a hazelnut then delicately dip them in the tempered chocolate to form our Bacis. While waiting for the chocolate to dry we created a tasty Perugina style Tiramisu, followed by a ganache-filled chocolate crostata - delizioso! Needless to say our diets will begin next week.
I can't thank Perugina enough for this wonderful weekend and would thoroughly recommend the class to any chocolate lovers interested in a unique culinary experience.

Ruby

2 months ago our group was contacted about a young Beagle mix who had been hit by a car and had a suspected broken leg. We knew that without our intervention her future looked bleak so we agreed to do what we could to save her. Ruby was immediately checked out by our vet who took care of her leg and made sure she was no longer in pain. Ruby is a very sweet dog who loves everyone. She is best pals with the dog in her foster home and the two can often be found snuggling together on the sofa. When she came over for photos today, she briefly met one of my cats but seemed very laid back about meeting her. When we first met Ruby she only weighed around 10 lbs but today she is a healthy 18 lbs and looks amazing. The vet estimates she is around 1 to 2 years old. She is heart worm negative and is looking forward to finding a loving family to give her all the care and attention that

Mini Lemon Meringue Pies

Today I decided to make some mini lemon meringue pies as there were some filo pastry shells in my freezer and a box of mini meringues in my pantry. All that was missing was the lemony filling. I figured I'd pick some up at the local supermarket and assemble these little desserts in the time it took to brew a cup of coffee. The only problem was I couldn't find lemon curd anywhere. Now while I am sure I could have found some at a specialty store, I realized that I could probably make my own so I pored through recipes, tinkered around with the ingredient list and voilà! Unlike jam, which can be a little tricky to make, lemon curd was surprisingly easy and I was left wondering why I hadn't made it before. Needless to say it didn't last long..

Ratatouille

Probably the hardest thing about ratatouille is its pronunciation! This is the perfect healthy comfort food for a cold winter's evening and it couldn't be easier to make. There's no right or wrong way to make this dish. Roasted vegetables and herbs mixed together and served with couscous- delicious!

Bentley

Bentley is still waiting for her forever home. She has now been at the Keller shelter for several weeks and we can't understand why. She is beautiful, incredibly smart and loves to play! Yesterday one of the shelter's wonderful volunteers spent some time working with her and she had the time of her life. She is crazy about tennis balls and is an excellent retriever who could play for hours on end and never get tired. Bentley needs to find an owner who shares her love of exercise and outdoor activities. Hopefully the right family will see her sweet face and fall in love. Paws crossed!

Bananas

Today I went bananas and created a light but satisfying dessert which is a twist on the classic banana split. Since I used home made pear ice cream, I named my creation the 'Pear-ana Split'. Instead of traditional caramel sauce, I pureed  warm dates with a little orange juice then finished the dish off with a dollop of whipped cream and my favorite new garnish, pomegranate arils.
